Behind Every Cut
75 Years in Missouri
For more than 75 years, the Bronenkant family has been raising cattle on the rolling pastureland of Missouri — a tradition passed down from the current owner’s father and uncle, and still worked by hand today. Even in late March, when we visited, their pastures were already waking up green, the kind of forage that shows in the meat it produces.
Bronenkant raises several types of cattle. Their Angus herd delivers the rich, well-marbled beef you’d expect from the breed. Their Holstein and Holstein-cross steers — less common in the beef world — produce a leaner, smoother, uncommonly tender cut that’s become a favorite among our customers who’ve tried it. You’ll also spot Charolais and other crossbreeds out in the pasture, adding to the variety of what ends up in the case.
Every animal is grass-fed and raised with real attention. When Mr. Bronenkant walked us out to the fence and called to his herd, the cattle trotted right up to meet him — a small thing that tells you everything about how these animals are cared for.
